this banana bread is moist, healthy, vegan and really easy to make. You only need one bowl to mix.
• 3 large overripe bananas
• 75 ml canola oil
• 1 teaspoon vanilla extract
• 210 g Flour
• 2 tsp baking powder
• pinch of salt
• 70 ml low sugar brown rice syrup
•60 ml almond milk (if needed)
Preheat oven to 175 degrees F. Grease your loaf pan.
In a medium-sized mixing bowl, mash 3 add oil and vanilla extract, mix well. Add the flour, baking powder, pinch of salt, low sugar brown rice syrup, and mix well, but don’t overmix, just enough until the flour is combined. Batter will be slightly thick. If the mixture seems too thick, add almond milk.
Pour batter into a greased loaf pan. Bake for about 50 min – 1 hour. After 50 min. do the toothpick test in the center of the loaf, if it comes out clean it should be ready. Remove from oven and let cool before slicing.
