Vegan rice bowl with teriyaki tofu and broccoli
A vegan rice bowl with teriyaki tofu and broccoli is always a good idea for a delicious healthy lunch.
You need:
• 150 g long grain rice
For the teriyaki tofu
• 200 g tofu
• 2 tablespoons soy sauce
• 2 tablespoons sake
• 1/2 tsp brown sugar
• 1 tbsp sesame oil
For the garnish
• 1/2 broccoli
• 1 tablespoon soy sauce
• Sesame seeds
Instructions:
Cook the rice as usual.
Take the tofu out of the package place it o a clean dish towel. Gently squeeze tofu with the dish towel to remove any remaining liquid. Cut the tofu into cubes and place them in a bowl.
Add soy sauce, sake and sugar to the tofu. Mix well. Wait a few minutes so the tofu can absorb the marinade.
In the meantime, cut the broccoli into florets and heat a pot of water. Once the water boils, add the broccoli, cook for about 10-15 minutes.
Finally, heat some oil in a pan. Add the tofu cubes and fry until browned for about 10 minutes. Add sesame oil at the end.
In a bowl, place a portion of rice, add broccoli. Then place the tofu in the middle. Decorate with sesame seeds.
