Delicious meringue with our Tapioca Syrup Solid
You can make a delicious meringue with our Tapioca Syrup Solid. Meringue can be eaten as a treat or used on cakes.
• 200 ml chickpea water
• 100 g sugar
• 100 g tapioca syrup solids
• 1 tsp baking soda
Preheat the oven to 70 degrees and line a baking tray with baking paper.
Mix sugar, tapioca syrup solids and baking soda in a bowl.
prepare a piping bag into which you can pour the whipped chickpea water.
Whip the chickpea water at high speed for about 10 minutes until you get a fluffy white mass.
Continue to whip the chickpea water, add the sugar mix by the tablespoon and whip for a few minutes longer.
Then pour the mixture into the prepared piping bag and place small dots on the baking tray.
Bake the vegan meringue for about 90-120 minutes. Open the oven door from time to time so that the moisture can escape and the meringue can dry out.
Allow the meringue to cool and seal airtight, or decorate cakes with it.
