Happy national Baklava Day.
On the occasion of today’s Baklava Day, we have a great recipe with rice syrup for you.

• 125 g filo pastry from the refrigerator
• 70 ml water
• 100 g sugar
• 100 g rice syrup
• 400 g chopped pistachios
• 120 g chopped almonds
• 120 g chopped walnuts
• 1 tsp cinnamon
• 125 g liquid butter
• 3 tsp chopped pistachios for garnish
• some butter for the mold
• baking dish 20cm x 25cm

Preheat the oven to 170 degrees top/bottom heat
Grease the baking dish with melted butter. Finely chop all the nuts together with the cinnamon you can also use an electric mixer.

Cut the dough sheets into the right shape and grease the first dough sheet with melted butter and place it in the mold. Spread 2 tablespoons of the nut mixture evenly on top, repeat the process until the ingredients are used up. Finally, finish with a sheet of dough.

Next, boil the water, sugar and rice syrup to make the baklava syrup, first on low heat for 3 minutes until the sugar is dissolved then on high heat for 5 minutes so that the water evaporates and a syrup is formed.

Pour the hot syrup over the pastry sheets and cut it into small squares or small lozenges as desired. Bake in preheated oven for about 35 min.

The baklava is ready when the dough sheets are golden brown in color. Garnish each piece with little chopped pistachios.
